Tumbador's Signature flavors represent Chef Jean-Francois Bonnet's choice for the "best of the best" of our diverse selection of bonbons. Bonnet, formerly executive pastry chef at New York's Restaurant Daniel, has been inspired by a French adage: Garder les pieds sur terre! "It means, "keep your feet on the ground," he explains. "Don't stray too far from the characteristics of the ingredients you use. Enhance them, don't mask them." For the signature collection, he balances dark chocolate with flavors like honey, pastis and sesame, ensuring that the distinctive taste of the ganache is enriched, not overwhelmed.
